Avocados are highly nutritious. Rich in monounsaturated fats, dietary fibre and vitamin E, this powerhouse of a fruit wins itself the title of ‘superfood’ frequently. It’s a great alternative to butter on your bread or wrap and is highly versatile in its use from pasta sauce to green smoothies!

Here are 5 delicious and nutritious ways with the humble Hass avocado.
Mexican Avocado Salsa
Ingredients:
- 1 avocado, diced
- 2 tomatoes, diced
- ½ red onion, finely chopped
- coriander, finely chopped
- lime juice
- corn kernels, drained and rinsed or chopped off the cob
- salt and pepper
Method:
- Combine all the ingredients in a bowl and toss together.
- Season with salt and pepper.
- Serve immediately with steak, chicken or fish or with your favourite Mexican dish.
Guacamole
Ingredients:
- 2 avocados
- ½ clove garlic, crushed
- lemon juice
- salt & pepper
- optional: cherry tomatoes + red onion
Method:
- Mash the avocado in a bowl with a fork.
- Add the juice of ½ lemon and season with salt and pepper to taste.
- To spruce it up a little, crush the garlic, finely chop cherry tomatoes and red onion.
- Stir these through the avocado and serve immediately with corn chips and vegetable sticks.
Smashed Avocado with Eggs & Feta
Ingredients:
- 2 eggs
- ¼ avocado
- 20g feta
- 2 slices grainy bread
Method:
- Boil the eggs for 10 minutes until hard boiled.
- Immediately drain the eggs under cold water, peel off the shell and roughly chop in a small bowl.
- Add the avocado and feta to the bowl and mash together with a fork.
- Generously spread the mixture over a slice of toasted grainy bread.
Avocado Steak Toppers
Ingredients (serves 2):
- 300g beef scotch fillet steak (2x 150g steaks)
- ½ avocado, thinly sliced
- 1 tbsp hollandaise sauce
- lemon juice
Method:
- Cook the steak until your liking. Set aside to rest for 5 minutes.
- Top the steak with avocado, drizzled with lemon juice and a dollop of hollandaise sauce.
- Serve with large side salad or steamed mixed vegetables.
Tomato, Garlic & Avocado Pasta
Ingredients (serves 2):
- 1 tbsp olive oil
- 2 cloves garlic, crushed
- 1 punnet cherry tomatoes, halved
- ½ bunch fresh basil, finely chopped
- ½ avocado, diced
- salt & pepper
- 1 tbsp parmesan cheese, grated
- 100g high fibre pasta
Method:
- Cook the pasta according to the packet directions. Drain and set aside.
- Heat the olive oil in a frying pan over medium heat. Add the garlic and tomatoes and sauté until soft. Season with salt and pepper.
- Remove from the heat and add the cooked pasta, basil and avocado. Stir until well combined.
- Serve immediately and top with a sprinkle of parmesan cheese.
